Sugar is an important food also commonly known as sucrose and has been originally produced in the Indian since ancient times. Is the world's most popular sweetener, in form a white crystalline substance, tastes sweet, a carbohydrate and 100pct soluble in water. Sugars may differ in colour, flavour, sweetness and crystal size. Each of these characteristics allows sugar to perform a variety of functions in food products, in addition to providing a sweet taste.
Global sugar production for the crop year 2011/12 is estimated in 168 million metric tons. Brazil is now the world's leading sugar producer and exporter, accounting for approximately 20 percent of global production and 44 percent of world exports, using for the cultivation of sugarcane averaged 9 million hectares with all necessaryagroecological zoning, which represents around 1 percent of Brazil's land.
During the most recent harvest, national sugar output reached 40 million tons. Approximately two-thirds of the sugar produced in Brazil is destined for foreign markets. More than 100 countries around the world rely on sugar from Brazil.
The most common sugar type produced in Brazil is the brown raw sugar, also known as very high polarity (VHP) sugar, what represents around 70 percent of the Brazilian sugar exports. The VHP sugar exported is shipped in bulk, typically to refineries. This sugar is consumable by humans, however must to undergo further refining to remove bacteria and other possible contaminations.
Technically, in the Brazilian SGS rating as Reference Base Units (RBU), the production process to VHP sugar results in the rating color/ quality ICUMSA 600 to 1200, according the ICUMSA (International Commission for Uniform Methods of Sugar Analysis) classification. The ICUMSA rating system could vary in some countries, but the Brazilian rating is the most widely used system and could vary from 45 to 4600, what represents highly refined granulated sugar and very raw sugar, respectively.
