The 100% Italian Pasta "Valle del Grano" is an excellent product. It's made at the "Pastificio Cerere" pasta factory in Enna, Sicily, one of the most important centres of excellence for the production of durum wheat pasta. Pastificio Cerere produces a superior pasta, full of taste and tradition, able to surprise the consumers with its taste.

 

Why is it so special? Basically because of the production techniques (kneading the dough in a vacuum, bronze drawing and slow drying) and the excellent quality of the raw material.

 

"Valle del Grano Pasta is the product of an authentic Italian agricultural supply chain, all-comprehensive and controlled, which begins in the field with the selection of the finest wheat varieties and ends on the kitchens of all over the world satisfying even the most demanding consumers.

 

Supply-chain:   strict production rules define every technique in the growing process. Pastificio Cerere supports local farmers, guaranteeing the traceability of the entire production process, from the field to the table.

 

Wheat:  durum wheat is obtained from Simeto, Core and Mimmo varieties, those autoctone from Sicily. 

 

Dough:  the Semolina is dampened in a pre-mixer with pure water dispensed at a constant temperature. to ensure the preservation and organoleptic characteristics of the pasta, the dough is kneaded in a vacuum-mixer. 

 

Drawing:  bronze drawing process "scratches" the pasta and gives it the rough surface it needs to absorb any type of sauce.

 

Drying:  pasta is dried in a uniform manner, as part of a long and delicate process designed to enhance the goodness and cooking properties.

 

Certifications:  the Pastificio Cerere pasta factory adopts IFS-BRC standards, an absolute warranty for the consumer.
