Directions for Enchilada Sauce: Combine 2 Tbs. of seasoning to 2 cups of water and 1 Tbs. of flour in a medium sauce pan on medium heat, and mix until mixture is thick and come to a slow boil. Reduce heat to low and simmer. Sauce will look like gravy. To make beef enchiladas: In skillet heat oil on low. Dip LiL Guy Tortillas Gruesa de Mesa Corn Tortillas one at a time to soften then dip in LiL Guy Enchilada Sauce. Stack on a platter. Fill one at a time with LiL Guy Taco Meat, chopped onions and shredded cheese, and roll. Place enchiladas in baking dish. Sprinkle with shredded cheese. Place in oven until cheese on top melts. Serve hot, and pour additional LiL Guy Enchilada Sauce on top, if desired.
