Inactive yeast results from secondary fermentation which has the property of improving significantly the animal performance indices. Of all the microorganisms studied, yeast combines the most favorable characteristics for use as animal feed, due to its nutritional and prophylactic characteristics. Its protein content ranges from 30 to 45%, presenting an average of 70-80% of amino acids, 8-12% nucleic acids, 6-8% ammonia, besides glucosamines, galactosamines, glutatione, lecithin and other compounds at smaller concentrations. It has high concentration of digestive enzymes, mainly glucanase and protease, that together with Vitamin B complex account for increased animal performance index.
