Khandsari is a type of unrefined raw white sugar made from thickened sugar cane syrup.
It is full of minerals and other nutrients, making it a healthier choice against refined & chemically treated sugar.
Process of Preparation
For the preparation of Khandsari Sugar, the mass (Gur) is boiled to high temp. The entire mixture is then transferred to Clay pitcher and allowed to remain in it until complete crystallization takes place. Crystal formation require complete one week. After this curing period starts from centrifugal machine, the molasses is then boiled again to obtain the Second Sugar. The First and second sugar is then sent to refineries, to obtained white khandsari Sugar. The Polarization of this sugar is 95-96% and Moisture Content is less than 0.5%. Crystallization takes place in the single pack of Vacuum Pan. It contents Glucose, Fructose, Galactose, sucrose, Maltose, Lactose.
