I. Introduction
Gamma-poly-glutamic acid (Γ-PGA) is a natural, multifunctional, biodegradable biopolymer produced from L-glutamic acid through fermentation process using a Bacillus subtilis. PGA is a water-soluble homo-polyamide consisting of D- and L-glutamic acid monomers connected by amide linkages between α-amino and γ-carboxyl groups. It is biodegradable, edible and non-toxic for human and environment. It can be applied in the fields of medicine, food, cosmetics, plastics and water treatment.
