Red radish is extracted from the red radish root ( Raphanus sativus L.) by mildly acid water or ethanol , mainly consist of anthocyanins. It presents difference color at different pH.
Red radish color is soluble in water and alcohol. Shade is changed with pH levels, red among pH1-5, purple-red among pH5-7, purple-blue in alkaline aqueous solution. It is stable to light and heat in acid condition.
