Cultivated by market gardeners, the rhubarb is harvested from mid-May until the end of September. The Britain region, more accurately the Plougonven area in Finistère, provides the bulk of our supply. Approximately 15 tonnes are processed each year, mainly during two periods, June and September. Rhubarb is supplied to us in stems of around 30 cm, which are then peeled and diced. Before cooking, our preparation is steeped in 50 % of the final sugar quantity.
