Red yeast rice is fermented by inoculation of Chinese Monascus anka naka zawa & K. sato on rice. It has been used as both traditional medicine and nutrition supplements in daily lives for more than one thousand years. In 1976, a Japanese scientist, Endo Akira identified the effective component, Monacolin K (or Lovastatin) in small quantity from the metabolic products of monascus . Monacolin K can reduce the cholesterol level of blood. The findings offered the strongest scientific evidence to explain why RYR could function in regulating the lipid level of blood.
