The accurate selection of the durum Wheats guarantees a genuine product of quality, rich in nutritive principles; the porous surface of the bronze drawing pasta allows to hold back the seasoning.
It is a product from selected local wheats, as Senatore Cappelli.
The long desiccation process changes from 12 to 18 hours, to low temperatures, fluctuating between minimum 40 and maximum 55 centigrade degrees; this process guarantees the safeguard of all the nutritional values coming from the raw material on the finished product, giving taste and capacity during the cooking.
All the production phases are viewed and coordinated by a food technologist, a biologist and pasta producers of tested experience.
