Spelt is one of the original heirloom varieties of wheat. It results in a lower gluten loaf that has a wonderfully distinct flavour. The grains can be ground into a fresh flour or soaked and added into the dough. Flour made from spelt has a nutty, slightly sweet flavor and can be used in most recipes that call for regular or whole-wheat flour.
Spelt is a shiny, dark rice shaped grain. When cooked, Spelt has a texture reminiscent of rice, a sweet, nutty flavor and firm chewy texture. Spelt gluten is easier to digest than wheat due to its water solubility
