Area/Origin: Coastal

Wheather: A fantastic RED WINE vintage. The grapes reached optimum ripeness with ease and the balance between yield and growth needed minimal interference. Premium healthy grapes were harvested at 24.5 degrees balling.

Viticulture: The vines from which these grapes were picked are nine years old and achieved top viticulture honours in 2007, having been awarded a Gold Medal in the annual Vinpro Block Evaluation competition.

Vinification: Grapes were bunch selected and picked in small 20kg boxes. Further bunch selection was done before crushing and de-stemming. These grapes were pressed by the traditional way of foot stomping. Fermentation occurred in small 500kg open top fermenters, using only wild yeast and punched down by hand 6 times per day for maximum extraction. Fermented grapes were manually loaded to avoid unnecessary pumping. Grapes were moderately pressed and moved to new French oak barrels for 18 months. No filtration was done, and the wine was bottled by hand.

Maturation: 15 months in 225-litre brand new French barrels. Three different coopers were used.

Production: 50 12-bottle cases
