Puerh is made from a broadleaf variety of tea and is grown in Yunnan province. It is initially processed like green tea but is then aged in a dark location for several years. This results in a form of oxidation caused by the growth of yeast on the tea and is similar to the method used to make wine. With Puerh it creates a unique taste that grows better with age. Caffeine is highly water soluble, so it is one of the first constituents of the leaf to be extracted in the steeping process.
