Whole or ground (powdered) cloves shall have a strong
aromatic, spicy odour and characteristic flavour. They
shall be free from off-flavours, including mustiness.
4.2 Colour
4.2.1 Whole cloves shall be of a reddish-brown to
blackish-brown colour.
4.2.2 Ground (powdered) cloves shall be of a brown
colour with a violet tinge.
