Agave Nectar is obtained from the sap in the hearts of the agave (pronounced mah-gay) plant. It has been used by ancient cultures in Mexico for thousands of years.
A new finding is that Agave Nectar has a very low Glycemic Index. The glycemic index or GI describes this difference by ranking carbohydrates according to their effect on our blood glucose levels. Choosing low GI carbs - the ones that produce only small fluctuations in our blood glucose and insulin levels - is a secret to long-term health. Research conducted by the University of Sydney has found Agave Nectar to have a very low GI. This means that when you substitute sugar or traditional syrup with Agave, you dont get the usual sugar rush and the negative effects associated with fluctuating sugar levels. Why? Because Agave Nectar will be absorbed slowly and will not put excessive strain on your body to metabolize the carbs.
