Product DescriptionTORAJACoffee comes from a region in the highland called Toraja, located inthe central part on Sulawesi Island; one of the 17,000 islands of theIndonesian archipelago.
Sulawesi, like its Western cousinSumatra, has a unique method of coffee production called "wet-hulling";which, is a cross between the more common "wet-processed" and "natural"methods. The coffee cherry skin is hulled off with a hand crankedpulper and left overnight to ferment. It is washed clean of its fruitthe next day and milled of its parchment skin while the coffee is stillwet. Lastly it is dried in its fully peeled "green bean" form. Thisprocess results in a heavier bodied, earthen toned cup. Theseparticular Green Beans are semi-aged and warehoused for a few years ina tropical climate. It harkens back to the classic old-style Sulawesicoffee, turning the green beans brown. The Toraja region is the sourceof most highest quality Sulawesi coffee. The complex and earthy flavorsare in high demand in Japan and the United States, causing it to bemore expensive than coffee from the neighboring islands (except for ourspecialty triple-picked process Premium Sumatra Coffee). Toraja Coffeeis 100% Arabica coffee and harvested by a very dedicated coffeeplantation. It is roasted by experienced roasters, where the qualitycontrol is beyond the average expectation. Only pure 100% TorajaArabica coffee will end up in your perfect cup.
