The art of blending Cognac begins with the selection of the fruit of various vineyard origins and the skill in maturing the brandies they yield over an extended period of time. The objective of the blending process is to create a spirit of perfect continuity of quality and character. Alizé Cognacs, produced by the house of L&L, are composed of eaux-de-vie from the Grande Champagne, Petite Champagne, Borderies, Fins Bois and Bons Bois areas of the Cognac region. These are referred to as the crus of Cognac. Alizé Cognacs are further distinguished in their use of the Folle Blanche grape, one of the oldest and rarest varieties in the Cognac vineyard. This variety lends lovely aromas of linden and violet to the brandies as well as generosity and longevity.
