This bacterial Alpha Amylase is obtained from Bacilus subtilis
Being an endoamylase it randomly hydrolyses alpha (1,4) glucosidic linkages of amylose and amylopectin of gelatinized starch to produce dextrins of various chain lengths and oligo saccharides.
