The product is both water-soluble and oil-soluble.
(1) The water-soluble annatto is red to brown, and it can be made into liquid, cake, powder or paste. It has a slight foreign odor. Its dyeing capability is extremely good, and it has a strong ability to resist bleaching agent. When exposed in the sunshine, it will decompose and fade. The water-soluble liquid is from Orange yellow to yellow, which is alkaline. It is slightly soluble in ethanol, but not soluble in Acidic solution.
(2) The oil-soluble annatto is red to orange-brown solution or suspension. It is soluble in alkaline solution, and it is not dissolved in acid solution. It can form precipitation. It is soluble in animal grease and vegetable oil. It is also soluble in trimethylene glycol, and acetone, but insoluble in water. It is not easy to oxidize.
