Artichokes are grown in California and Spain. A great majority of the Californian production goes to the fresh market. Morocco is trying to enter into the processing industry but is still in the developing stage. artichokes come packed in cans or in glass; in brine or marinated in oil. Typically they are sold as hearts or quartered in 15 oz cans.
