Tasty andimpressive, precook one-pound washed baby carrots in boiling saltedwater until tender but firm. Melt one-fourth cup unsalted butter withone-fourth cup Marsala wine; cook until bubbly. Add carrots; cook overhigh heat until mixture thickens and carrots are well coated, about 3minutes. Season with salt and pepper to taste. Serve with roasted orgrilled meats. Carrots love to be enhanced with parsley, basil, ginger,mint and chives. To store, cut off greens to prevent moisture loss;place in plastic bag; refrigerate.
