Barley (Hordeum vulgare L.), a member of the grass family, is a major cereal grain grown in temperate climates globally. Barley is a member of the grass family. It is a self-pollinating, diploid species with 14 chromosomes. Barley flour has a mild, but very slightly nutty, flavor the complements both regular and whole grain flours.
Barley's nutrition is much like wheat's. Barley flour is prepared by putting hulled or pearled barley though grain grinder. Barley flour has weaker gluten than wheat flour. Barley is a wonderfully versatile cereal grain with a rich nutlike flavor and an appealing chewy, pasta-like consistency. Its appearance resembles wheat berries, although it is slightly lighter in color.
