The Union de Ejidos Prof. Otilio Montaño (UDEPOM) grows the coffee in the Sierra Madre Mountains of Southern Mexico in Chiapas. Ninety-nine percent of the Union members are native Mayan, indigenous from Mache, Tzotzi, Tojolaba, Jaleco and Tzeltal origins. The coffee is grown at between 4,800 and 5,400 feet in altitude and is comprised of family farms between one and ten acres. Each worker in the Union is paid on a work-share basis, rather than by farm yield. Both typica and bourbon varieties are cultivated. We also offer this coffee at a lighter roast as our Organic/Fair Trade Certified Mexican (Chiapas). Barrington Organic/Fair Trade coffees are certified organic at origin by the National Organic Program (NOP). The United States Department of Agriculture (USDA) certifies the Barrington Roastery to process 100% Certified Organic Coffee through Baystate Organic Certifiers (Winchendon, MA).
