"Summer Sausage" got its name from the days on the farm, when meat was ground up and mixed with salt and spices to preserve it, then stuffed into casings (usually pork intestines), then hung in the "Summerhouse" to cure (through the salting). The Summerhouse on my grandfathers farm was a small stone structure not to far from the family home. This preserving method provided tasty meat to eat during the long winter.
