BENIIMOSU (BENISU or Purple sweet potato vinegar) is made by repeated fermentation and maturation of BENIIMO MOROMI* made from BENIIMO (Japanese purple sweet potatoes) from Tango in Kyoto.
This vinegar is rich in anthocyanin, a kind of polyphenol antioxidant, and very good for your health. For your health and beauty, it is good to drink BENIIMOSU with water or carbonated water. The bright red color of BENIIMOSU is also suitable for pickling DAIKON (Japanese radish) or turnips, or making salad dressings. It is good for coloring SUSHI rice, sauce for Ice cream or dishes, or even cocktails.
*MOROMI: thick mash of cereal grains (or sweet potatoes) that will be filtered or distilled and separated into sake and lees.
(How to drink "BENIIMOSU")
1. Dilute it 5-8 folds with water. It makes much easier to drink if you add honey.
2. You can add honey and milk. Vinegar helps absorption of calcium and makes the drink like yogurt.
3. Dilute it with fruit juice. It also makes BENIIMOSU easier to drink and tasty.
4. Its mild taste is good for vinegared foods, marinades, and salad dressings.
5. For drinks, add honey before other stuff.
BENIIMOSU has been sold at Japan's top department stores and many liquor shops and enjoyed a good reputation among health-conscious people.
