Formaggio prodotto esclusivamente con latte intero di pecora, pastorizzato, viene stagionato per almeno 30 giorni, a seconda del tipo di lavorazione e di confezionamento. Il sapore è gradevolmente acidulo, fresco, leggermente salato, a lunga persistenza aromatica.
