Choosing the Right Granulation
Bicarbonate granulation influences the rate of the chemical leavening reaction. When developing new products, it is a good idea to try different grades to determine which one will yield the optimum finished product.
Four food grades of sodium bicarbonate commonly used in the baking industry are:

The bicarbonates' application as chemical leavening agents for baked goods is one of its best known uses. When reacted with an acid or heat, bicarbonates release carbon dioxide (CO2) gas. This aeration causes batter and dough to rise, making for lighter biscuits, cakes, pancakes, cookies, and a host of other chemically leavened baked goods. Bicarbonates are an essential ingredient in baking powders, self rising flours and packaged baking mixes. The leavening function of bicarbonates is not limited to baked goods but is useful in manufacturing hard candies such as brittles, crisps, and sponges.
Grade 1 (Powdered)
This grade is ideal for scratch bake biscuits, cookies, instant or quick breads and most cakes. It dissolves rapidly to assure quick, complete availability for reaction with the acid ingredients.
Grade 1 - TFF
(Treated Free-Flowing)
Treated with tricalcium phosphate to improve flow quality, this grade is particularly useful in self-rising flours and packaged mixes.
Grade 2 (Fine Granular)
The narrow particle size distribution of Grade 2 facilitates rapid, uniform blending. This grade is recommended for those products where minimal leavening during mixing and holding is desired. Examples are products which require long bench time and in refrigerated and frozen doughs and batters which require minimal leavening during preparation and storage. This grade is also recommended for baking powder where pre-reaction during storage can be a problem.
Grade 4 (Granular)
The particle size distribution of Grade 4 is even more narrow than Grade 2. Grade 4 is useful in refrigerated doughs and some doughnut mixes. It is also recommended for baking powders used in regions where high temperature and humidity are the norm.
