Black bean is the seed of black soybean (Glycine max L. Merr.) Varieties of Soybeans are used for many purposes. The highest recorded amount of Anthocyanin appears to be specifically in the seed coat of black bean containing some 2,000 mg per 100 g. In Chinese medicine the seed coat is called Liaodouyi with an effect of detoxification and diuretics.
