Bucaro? is a hard "calcagno" sheep's cheese that comes with or without black pepper corns and has a "basket weave" rind. It is aged for at least four months and can be grated or eaten as a table cheese. Made from whole sheep's milk, it has a slightly sharp flavor. The range is completed with the 'PRIMO SALE' variety, a soft table cheese that is aged for a very short time.
Sirbone? comes in two varieties: the 'Crotonese', which weighs about 1.8 kg, and the 'Foggiano', which weighs 5 kg. Both are hard cheeses and have the typical "canestrata" shape. The aging process of more than three months gives it a pleasantly sharp taste. These cheeses made from sheep's milk are fine table cheeses and can be grated (depending on the aging period).
