Gindara - also known as Butterfish,Oil fish and by the accepted common name,Escolar. Gindara as its called in bali is a pure white-fleshed fish,high in oil content. As it's a by catch of tuna, it's very abundant in the market. Suitable for all preperation methods but particular suited for saut'e, baking and grilling. Excellent on a teppanaki grill. Also delicious smoked. Very similar to Chilean sea bass or Black Cod and can be used as a superior substitute. As Chilean Sea bass is becoming a very scarce worldwide and close to be considered an endangered species, Gindara is rapidly becoming the most popular fish exported from Bali. Available all year around fresh and frozen in loin.
