For Rich Fruit Cake:

Ingredients:  Bunga Raya Mix Fruit :                      500g (5pkts x 100g) or (2pkts x 250g)

                        Bunga Raya Plain flour                      250g

                        Butter                                                   225g (1 pcs)

                        Brown Sugar                                       225g

                        Eggs                                                      5 (medium size)

                        Choppped cashew nuts                   50g

                        Chopped Almonds                             100g

                        Salt                                                        4g

                        Nutmeg, cinnamon & All

                        Spices Powder                                    2g

                        Vanilla Essence                                  5ml

                        Black Treacle                                      10ml

                        Grated Rind of 1 Orange &

                        Jelly Jam                                              30g

Method to Prepare:

1)       Sprinkle fruit mix and nuts with spirit or FRUIT JUICE and place it overnight.

2)       Mixed up the butter and sugar until light and fluffy. Add in essence, spices and black treacle and the jam and mix them  thoroughly.

3)       Add in eggs one at a time.

4)       The flour and fruit mixture are add in alternately at low speed and mix thoroughly.

5)       Put mixture in a prepared 20cm round tin and bake for 3 ½  hours at 180 C.
