C¨¤ Isidora
"Ca??Isidora" in Lazise - Verona - Italy: winery for pressing and production of wines. C¨¤ Isidora is equipped with state-of-the-art technology and is the ideal partner for processing the 1,300 tonnes of grapes grown by the 24 highly professional and already historical cultivators. Production is controlled by Giuseppe Gallo and his collaborators during all the cultivation phases: from the fertilizing (if necessary) to the analysis of the first bunches in May, the thinning out in Summer (green pruning), the irrigation (only used in emergency situations, before the onset of a water shortage). Lastly, the harvesting date for each farm is scientifically established by the maturation index. All the 316 stainless steel tanks are monitored through a computerised system which supervises each phase of the winemaking cycle. Each container has 'its own' temperature and its parameters are unloaded to a printer, so that even the smallest detail does not get overlooked.
