An intense ruby red, tending towards garnet with age; vinous and vegetable fragrances that are characteristic and persistent; a dry, full taste that becomes austere with age. The grapes harvested on the third week of October are de-stemmed and then left to ferment in stainless steel tanks for about two weeks, at a controlled temperature. When the optimum alcohol content has been reached, the wine is then separated from the exhausted skins, lightly pressed, filtered and left to rest in the cellar until the time for bottling.
