This traditional cake was introduced to Indonesians in the 19th Century during the Dutch Occupation. A confection that used to be savoured only by the Dutch elite (because of the rich, expensive ingredients and the sheer amount of time and skill needed to bake and perfect each layer), the Lapis is now a widely appreciated cake. Here at Cooking Art, we still bake Lapis the traditional way with our authentic recipe.

The Surabaya lapis is made with the same spices as the Spekkoek, but its less intricate with only 3-layers.
