The calamansi is a citrus fruit that is almost unknown outside asia.
Its appearance is similar to a lime; botanically speaking IT is a cross between a sour tangerine (citrus-sunki) and a kumquat. Originally from china, IT quickly moved to the philippines and indonesia. IT grows on small trees, which reach a maximum height of 4 metres, and flower and grow fruit all year round.

The calamansi looks like a lime but is much smaller (30-40mm) . IT has a thick skin so that IT can almost only be processed into puree. When fully ripe, IT has a green to orange colour. Compared to the lime, the calamansi is more bitter, sweet-sour and exotic. In particular, the functional ingredients contain pectin and Vitamin C.
Application:
As IT is much too sour for normal consumption, the calamansi with its strong citrus aroma is particularly suited for producing refreshing drinks such as apple OR pear-calamansi spritzers, citrus jams and jellies as well as chutneys and marinades. One recommendation for example is a mix of kumquats and / OR papaya with calamansi as a BASIC mix.
