Description:

The Calypso Bean is an exotic and beautiful relative of the Kidney Bean.  Our Red Calypso Beans are part white and part red with distinctive markings that curve around the bean.  Round and plump, Calypso Beans are about 3/8 inch long with a silky smooth texture and sweet firm flavor making it a delicious addition to Pasta salads, soups, casseroles and stews.

Suggested Use:

 Cooking Calypso Beans is large quantities of water helps keep them from losing their distinctive coloring.  Calypso Beans can be combined with rice to make a unique stuffing for vegetables. Excellent in Poblano stew or bean salad with mango and citrus.  Soak overnight; 1 cup dry equals 2 ¼ cups cooked.
