PGFE can be applied in the candy manufacture as emulsifier and plasticizer, which prevent the fat separation in the milk candy and enhance the moisture resistance and decrease distortion and prevent the wrap paper sticking in the teeth and improve the taste. In the chocolate candy, PGFE can restrain grease from crystallization, prevent the surface frosting, prevent the candy from softness effecting taste due to wetting and heating. PGFE can decrease the viscosity of the chocolate syrup so as to be easy to process. PGFE is an excellent plasticizer for gum confection, which make gum confection and bubble gum softer and more delicious. In the other candies, PGFE can be applied as oxygenation agent.
