The pigmentation of chicken skin and egg yolk is a natural process, in which canthaxanthin is one of the most essential coloring agents. Since unable to synthesize the canthaxanthin by themselves, poultry have to obtain it from feed and then deposit it in skin and fat. Due to the insufficient canthaxanthin content in common feed of poultry, the poultry products are unable to meet the consumers' demand of "golden and yellow". Hence, it is necessary to add some kinds of yellow and red pigments into feedstuff in order to satisfy the consumers buying habit.
