Our Origins capers belong to the family of the Capparidaceas. They are closed buds of a native bush from the Mediterranean region. They are collected by hand and carefully selected between the springs end and at the beginning of the summer season. Then, they are washed, dried and placed in barrels which contain a water-salt dissolution at a 25º Baumé.
