The Carrot is a biennial plant consisting of a rosette of leafy dark green foliage and a taproot. Although the leaves of the Carrot are edible, the root is the most commonly consumed part of the plant. The taproot is generally colored a bright orange, however varieties of red, white, purple, and yellow do occur to a smaller extent. The Carrot is harvested by pulling the entire plant up and collecting the roots. However if the plant is left in the ground for another year after producing a root and leafy top it will grow a tall stem with an umbrella-like spread of tiny white flowers. The flower then produces seeds. The Carrot has a mellow, sweet flavor, and is one of the most popular vegetables in the United States.
