| Carrots are grown as a cool season vegetable. Production of the enlarged hypocotyl occurs most significantly when cool nights slow the plant respiration, allowing for an accumulation of carbohydrates. Of all root crops, D. carota var sativus is considered the most important. High Vitamin A, mineral and dietary fiber content of carrots contributes to their importance as a major food crop utilized in our diet. | ||
