The carrot is a biannuel plant from the Apiaceae family whose orange coloured root we consume.
Origin
carrots are a root plant which originate from the Middle East and Central Asia where they were cultivated for thousands of years. They were used for their medicinal properties. As it is was yellow and tough, the carrot was not very appreciated as a vegetable. Slowly its texture and its colour improved and became orange. Fodder carrots which are white also exist along with ancient varieties that are red, violet or yellow.
Nutrition
Carrots can be prepared in a number of ways, raw or cooked, puréed, sliced, as a soup, grated... The carrot is the food containing the most beta-carotene, which is reputed for giving a good complexion.
Cultivation
Carrots are cultivated in the French coastal region of Picardy, the Seine Maritime, the Manche and Brittany. They particularly like light sandy soil. They are harvested from July to November by machines that pull the roots out of the ground.
