Cashews (Anacardium Occidentale) have a rich and little known history throughout the world. They have been widely cultivated in India and Africa since the 16th century. Native to the Amazon region, Portuguese missionaries introduced cashews to India more than 500 years ago, mainly to prevent soil erosion. Cashew trees produce both a colorful fruit and a seed (the kidney shaped Cashew Nut). After the cashew flower blooms, the nut forms. The later swells between the nut shell and the stem. In its raw form, the cashew kernel is soft, white and meaty. When roasted it changes color to golden and it becomes one of the most delicious and tasty products in the world.
