Beluga (Huso Huso)
The largest and the rarest Sturgeon, the Beluga Sturgeon (Huso Huso) can weigh from 300 kilos to a majestic 1 ton plus and can grow up to 6 metres in length. They often live to the ripe old age of 100 or more and produce eggs from about the age of 18 years.
Beluga eggs are steely grey in colour, 3.5mm in diameter with an unusual delicate membrane. The taste is very subtle with a hint of Walnut and a soft creamy texture. Caviar labelled "Imperial" or "Royal" is selected from the largest and lightest grey Beluga eggs.
