The Celtic pork chorizo (cular type) is made out from a mixture of carefully selected meats taken from wild breeding Celtic hogs as main ingredient. These meats are dressed with Spanish "pimentón dulce" (mild Spanish Paprika) and some other Spices to marinate some 24 hours. Then is cured for 3 months by natural air-drying. It is presented stuffed into casings of natural pork tripe.
