Traditional vinification with controlled temperature in stainless steel tanks.
Fermentation average of 30 to 40 days for the finest grapes, including a phase of cold pre-fermentation maceration of one week, two weeks of fermentation with gentle extraction by pumping over and punching down and load shedding for the best tanks. The fermentation is followed by measuring densities, indicating the disappearance of sugars and fine control of fermentation temperatures. Finally, a post-fermentation maceration takes place in order to obtain an optimal concentration of tannins, with a daily followed by tasting decide when to run off.
The malolactic fermentation takes place in oak barrels for a share of the harvest, allowing a true fusion of aromas with oak, creating a new range of flavors.
When fermentation is complete, the harvest of the year will be aged in French oak barrels of two wines for 12 months to reveal the bouquet and refined tannins.
To respect each vintage the wine is bottled without filtration.
