Botanical Name: Piper nigrum Use in sauces, pickling Spices and marinades. Use whole peppercorn in mills. Ground pepper Flavour fades in time so it is best where possible to grind whole peppercorns as you require them. For maximum flavour when cooking always add pepper at the end, as it looses its flavour in long cooking times. Alternatively you could tie a muslin square full of peppercorns and add this to slow cooking dishes and remove before serving.
