" Ladotyri " : Traditionally made, marinated and ripened in olive oil whole sheep cheese. This cheese has been made by a shepherds wife in a chestnut tree forest up in a mountain over Agiasos village in Lesvos Then it is put to ripen, for at least 5 months, in a huge earthenware pot, full of virgin olive oil, by the side of the water mill, where it is cool and fresh.
