Cherries are a delicious sweet fruit with a limited season. Cherries also bruise quite easily and develop soft spots if mishandled, so it is best to select cherries carefully. Select firm, full colored cherries that are free of splits or other damage. Green stems are also a good indication of freshness. Cherries can be stored in the refrigerator for up to a week. The most widely grown variety of red cherry is the Bing. Another less grown red cherry variety is the Lambert, which are harvested about a week after the Bing. A caution: cherries often have a higher pesticide residue than most other fruits, so it is best to thoroughly wash them immediately before eating.
