Initial development work, which involved the creation of, and experimentation with, a secret blended recipe, was undertaken by a local Taranaki brewer with fifteen years experience in the industry. The raw products - whole sweet chestnuts, ethanol and the blended recipe are then combined into vats for maturation. Currently the processing and maturation is undertaken at a local winery with all health and safety requirements current, and in place
